10 with 5: #4 Tilapia Glaze

I love fish. I love seafood in general. Since I've been put on a low-oxalate diet, I haven't had much seafood. I miss sushi the most, but that's the most evil food I could eat right now. Other sea creatures are not as bad, like tilapia, for example.

I had some tilapia fillets in the freezer, so I thought I'd incorporate it into my next recipe for 10 with 5 challenge. It turned out quite yummy; even my dad liked it. The recipe is for a glaze for the fish. I recon it would work nicely with salmon as well.


1 tsp of ground paprika
1 tsp of ground ginger
1 tsp of ground garlic
2 tbs of honey mustard
1 tbs of olive oil

Mix everything together until it forms a paste. It it's too thick for your liking, a wee bit of lemon juice would work as a flavorful thinner. That's it for the glaze.

But since I cooked the fish too, I think it would only be fair if I shared that too.

Slice a medium-sized tomato.

Lay it on your baking dish.

Rub your fish with the glaze on both sides and lay over the tomatoes.
Slice another tomato and put over the fish. Then top with shredded mozzarella.

Bake in a preheated oven to 350F for 13 mins, covered. Then take off the cover and bake for 5 more minutes. The result? Delicious, fragrant fishy.
